Ingredients:
For the Shrimp:
1 lb large shrimp, peeled and deveined
2 tbsp Cajun seasoning (like Take A Peak Cajun Blend)
1 cup buttermilk
1 cup cornmeal
1/2 cup all-purpose flour
Vegetable oil (for frying)
For the Sandwich:
4 hoagie rolls or French bread, sliced lengthwise
1 cup shredded lettuce
1-2 tomatoes, sliced
Dill pickle slices
For the Po' Boy Sauce:
1/2 cup mayonnaise
1 tbsp ketchup
1 tsp hot sauce (optional for extra heat)
1 tsp Cajun seasoning
1 tsp lemon juice

Instructions:
1. Marinate the Shrimp:
In a bowl, toss the shrimp with Cajun seasoning.
Pour in the buttermilk and let the shrimp soak for at least 15–30 minutes.
2. Prepare the Coating:
In a shallow dish, mix the cornmeal and flour.
Remove the shrimp from the buttermilk and dredge in the cornmeal mixture until well coated.
3. Fry the Shrimp:
Heat oil in a deep skillet over medium-high heat (about 350°F).
Fry shrimp in batches for 2–3 minutes per side until golden and crispy.
Drain on paper towels.
4. Make the Sauce:
In a small bowl, mix mayo, ketchup, hot sauce, Cajun seasoning, and lemon juice until smooth.
5. Assemble the Po' Boy:
Lightly toast the rolls if desired.
Spread the Cajun sauce on both sides of the bread.
Layer with fried shrimp, tomato slices, shredded lettuce, and pickle slices.
6. Serve:
Enjoy your Cajun Shrimp Po' Boy with chips or fries on the side!
Tip: For extra kick, sprinkle more Cajun seasoning over the assembled sandwich.
